Bombay special...Pav bhaji...!!!

 
      There are hundreds of mouth watering and delicious snacks but Pav bhaji has special place .It  is a fast food dish from Maharashtra, India, consisting of a thick vegetable curry fried with butter and served with a soft bread roll called Pav with lots of butter and onions. The dish originated in the 1850s. Pav bhaji is now offered at outlets from simple hand carts to formal restaurants in India and abroad. It's delicious simple and easy to make plus it has lots of vegetables so it's good for kids who don't want to eat vegetables, you can make it  healthy if you don't use butter and replace white pav or bread roll with brown or multigrain pav or bread roll. Pav bhaji has many variations in ingredients and garnishes, but is essentially a spiced mixture of mashed vegetables in a thick gravy served hot with a soft white bread roll, usually cooked on a flat griddle (tava).
          You can make cheese pav bhaji which  cheese on top of bhaji, fried pav bhaji in which bread rolls tossed in bhaji, Paneer pav bhaji in which their is paneer in the bhaji , I am sharing simple pav bhaji recipe you can make variations according to your choice..!!!

Ingredients-

2 tbsp oil
4 Potatoes (boiled and mashed)
1/2 cup capsicum(finely chopped
1/2 cup carrots(finely chopped)
1/2 cup bottle Gourd(boiled and mashed)
1/2 cup Green Peas(boiled)
1/2 cup French beans(boiled)
1/2 cup cauliflower
1 tbsp Fresh ginger
8-10  Garlic cloves(Graded)
1/2 cup Onion(finely chopped)
1 cup Tomatoes(finely chopped)
1 tbsp of green chili (finely chopped)
salt to taste
1/2 tbsp of dry mango powder
1 tbsp lemon juice
1/4 cup fresh coriander
4  tbsp Pav bhaji Masala
Butter to taste and for Garnishing


Method-

Take a pan heat oil and sorte garlic then add chopped onions and cook till light golden brown add ginger and tomato and green chili and little salt and keep it aside now take a big flat griddle (tawa) or you can also use wok now mix all the above boiled and mashed vegetables with the onion and tomato gravy and add  dry mango powder and pav bhaji masala you can also use little red chili powder if you want and cook till it all blends well now take a potato masher and mix all the things well then add butter to taste and sprinkle chopped green coriander on top , sorte pav or double bread with butter and serve along with butter onion rings and lemon. You can add cheese on top of bhaji if you like cheese or add paneer to make paneer bhaji as per your taste.
