Bombay special...Pav bhaji...!!!

 
      There are hundreds of mouth watering and delicious snacks but Pav bhaji has special place .It  is a fast food dish from Maharashtra, India, consisting of a thick vegetable curry fried with butter and served with a soft bread roll called Pav with lots of butter and onions. The dish originated in the 1850s. Pav bhaji is now offered at outlets from simple hand carts to formal restaurants in India and abroad. It's delicious simple and easy to make plus it has lots of vegetables so it's good for kids who don't want to eat vegetables, you can make it  healthy if you don't use butter and replace white pav or bread roll with brown or multigrain pav or bread roll. Pav bhaji has many variations in ingredients and garnishes, but is essentially a spiced mixture of mashed vegetables in a thick gravy served hot with a soft white bread roll, usually cooked on a flat griddle (tava).
          You can make cheese pav bhaji which  cheese on top of bhaji, fried pav bhaji in which bread rolls tossed in bhaji, Paneer pav bhaji in which their is paneer in the bhaji , I am sharing simple pav bhaji recipe you can make variations according to your choice..!!!

Ingredients-

2 tbsp oil
4 Potatoes (boiled and mashed)
1/2 cup capsicum(finely chopped
1/2 cup carrots(finely chopped)
1/2 cup bottle Gourd(boiled and mashed)
1/2 cup Green Peas(boiled)
1/2 cup French beans(boiled)
1/2 cup cauliflower
1 tbsp Fresh ginger
8-10  Garlic cloves(Graded)
1/2 cup Onion(finely chopped)
1 cup Tomatoes(finely chopped)
1 tbsp of green chili (finely chopped)
salt to taste
1/2 tbsp of dry mango powder
1 tbsp lemon juice
1/4 cup fresh coriander
4  tbsp Pav bhaji Masala
Butter to taste and for Garnishing


Method-

Take a pan heat oil and sorte garlic then add chopped onions and cook till light golden brown add ginger and tomato and green chili and little salt and keep it aside now take a big flat griddle (tawa) or you can also use wok now mix all the above boiled and mashed vegetables with the onion and tomato gravy and add  dry mango powder and pav bhaji masala you can also use little red chili powder if you want and cook till it all blends well now take a potato masher and mix all the things well then add butter to taste and sprinkle chopped green coriander on top , sorte pav or double bread with butter and serve along with butter onion rings and lemon. You can add cheese on top of bhaji if you like cheese or add paneer to make paneer bhaji as per your taste.

Potato stuffed Green Serrano peppers...!!!



         Chili's are very essential part of our Indian Cuisine, we all love spicy food, and in India we find varieties of chili's , some are spicy and are among the most spiciest chili's of the world like bhoot jolokia which is 400 times more hotter than tabasco sauce. Today I am going to share one of my recipes  made of green Serrano Pepper (moti hari mirch) with you all.

Ingredients-
For stuffing-
6 Green Serrano Peppers(moti hari mirch)
1 tsp of oil
1/4 tsp of cumin seeds
1/4 tsp of Asafetida(heeng)
4 Medium sized Potatoes ( boiled n mashed)
1 tsp of red chili powder
1 tsp of garam masala powder (indian spice mix)
1 tsp of graded ginger
1 tsp of salt or to taste
1/2 tsp of dry mango powder
1 tbsp of green coriander

For the outer layering-
1 cup of all purpose flour
2 tbsp of refind oil
1 tsp of salt

Method-
For stuffing-
Slightly make a slit on all the peppers from one side and keep aside, now take a pan add  1 tsp of oil and cumin seeds and asafetida and add mashed potatoes and all the spices and  mix well to make the stuffing and stuff it inside all the peppers and keep aside.

For the outer layering-
Mix all the above mentioned ingredients together to make a dough and keep it aside for atleast 15 minutes. First make the dough then stuff the peppers. Now after the dough have rested well, make thin sheets of it with help of a rolling pin and cut it into thin stripes , then start rolling it over the pepper by slightly rotating it in circular motions use little water to fix it, now deep fry all the peppers on medium flame and serve hot with tomato ketchup and green chutney or dip.

Pasta Alfredo...!!!


    One of the favorites from Italy that gelled well with  us and is everyone's favorite "PASTA" in any form or in any sauce white , red or green . we simply love it. Today I am going to share my recipe of white sauce pasta with you all. Hope you enjoy making it and eating it. It's simple and easy with very few ingredients.

Ingredients-

250 gms of pasta (any shape, I took flat) (uncooked)
1 cup of white sauce
1 tbsp of olive oil or butter
2 tbsp of finely chopped garlic
1 medium sized chopped onion
1tsp of oregano fresh or dried
Pinch of Black pepper powder
5 Cubes of cheese (you can use any other cheese of your choice as well)(graded)
1/2 cup cream
Salt to taste
(you can also usevegetables of your choice like mushroom, bell peppers, corns, carrots, broccoli

How to make White Sauce-

Ingredients-
1 tbsp of butter
2 tbsp of all purpose flour (maida)
1  cup of milk
Pinch of Salt n crushed black pepper


Method-
For white sauce-

Take a pan slightly heat butter and add all purpose flour and roast it for few minutes keep stirring regularly flour should not burn or even should not turn red otherwise white sauce will not be white, and keep down from heat and let it cool for few minutes , now slowly add milk to it and keep stirring using whisk otherwise it will form lumps let it boil for few minutes then add pinch of salt and black pepper powder.

For white sauce pasta-
Cook Pasta in water and 1 tbsp of refind oil otherwise it will stick while boiling.
Take a wok or pan slightly heat butter or oil put chopped garlic and sorte then add onion and any vegetables of your choice like mushroom, broccoli, bell peppers, corns and carrots then add  cooked pasta to it, then add white sauce and stir well till it coats all the pasta well now add cheese and cream, salt and pepper sprinkle oregano and serve hot.

 This is the most easy way of making any pasta, you do not have to require any extra ingredients, their are varieties of pasta available that I will share with you all later on. Do write how you like it , Thanks...!!!

Red lentil balls and Red chili garlic dip...!!!


  Red lentils or masoor dal as we popularly know it is very rich in nutrients and has soluble fibers that are easy to digest. I am sharing my recipe of Red lentil balls with Red chili garlic dip with you all. This recipe can be used a side dish during house parties or served as evening snack as well.


Ingredients-
For Red lentil Balls-

2 cups of Red lentil (masoor dal, splitted, soaked and husk free)
6 tbsp of mustard oil ( you can use any other oil but mustard oil will give it that earthy feel)
1/4 tsp of cumin seeds
1/2 tsp of turmeric powder
1/2 tsp of red chili powder
1/2 tsp of coriander powder
1/2 tsp of salt
1 tsp of green chili chopped
1 tsp of graded ginger
1 tbsp chopped green coriander

For Red chili garlic dip-

2 pickled Red chili with stuffing
6 cloves of garlic
2 medium sized tomato
(no need to add salt because pickled chili have already salt)
Method-
For Red lentil or masoor dal balls-

Take lentils in a grinding jar and make a thick paste, now take a deep nonstick pan or wok add 4 tbsp of oil, then add cumin seeds, turmeric,red chili and coriander powders and add grinded lentil to it , then add chopped green chili, graded ginger and salt and stir till oil separates then add green coriander and keep it aside to let it cool a little, but it should not become cold otherwise balls will not form, when all balls are made take another pan and add 2 tbsp of oil and put all the balls in it and shallow fry it till they become litte crisp.
TIP- You can make balls before a day if you are making it for guest and shallow fry them the other day, it will save your time.

For Red chili garlic dip-
Take all the above ingredients in a grinder and gring it into a coarse paste with little bit of water and serve with the dish.. You can use this dip with other snacks also.
